Holy Scones

The thing that is great about this recipe is you can make a big batch and freeze the dough. Bring to room temp, form your scones and bake for 25 mins and you look like you cooked all day. Make sure to dust some flour on yourself for some real brownie points. Use whatever nuts, dried fruits or chocolate chips you have. You can do anything with them!!

Raisin & Chocolate Chip Scones
4 cups sifted flour (not self rising, cake or all purpose)
1/2 cup sugar
1 Tbsp Baking Powder
1 tsp Salt
1.5 sticks cold unsalted butter, cut into 1/2" pieces
1 cup raisins and chocolate chips (or whatever you like)
1 egg
1 cup heavy cream or whole milk

Preheat to 475. Whisk flour, sugar, baking powder and salt in bowl. Scatter butter pieces on top of dry mixture and blend in with your fingertips until you have a course mixture. Mixed in dried fruit and chips. Whisk together egg and cream or milk. Fold into dry mixture until dough just comes together (dough will be sticky and delicate). Turn out onto a lightly floured surface and press into a disc shape, about 1" thick. Cut with cutter or cut like a pizza. Place scones on parchment lined or greased baking sheet. Brush tops or scones with additional cream or milk and sprinkle with cinnamon or regular sugar. Bake for 25 to 30 mins, rotating cookie sheet halfway through baking. Cool for 10 to 15 mins before serving. Enjoy!
